Next, traditional Thanksgiving pies that my Nannie taught me how to make. I also credit her with teaching me how to properly roll pastry. The important part is that you take the scraps, wrap them around a paperclip on a string tied to a stick, and then fish for minnows.

It WAS pretty good, though I learned an important lesson in baking with ginger. When COOKING with ginger, fresh, powdered, crystalized or otherwise, I use as much as I can get in there. However, when BAKING, a little – and I mean very very little, like no more than 1/10th of what one would use in cooking – goes a looooong way.
