Okay, so the souffles were made last night. I used the mini chocolate souffle recipe from Sokol’s ‘Professional Baking.’ The only change was that I did not use the cookie crumbs as a topping. Seemed like overkill to me. I want a souffle for the texture and the crumby topping seemed wrong. For me. Your tastes may differ. Hell, you may find that cookie crumb topping makes everything exquisite. If so, more power to you. But as far as I am concerned, only sour cream and bacon are the only appropriate unnecessary additions to any dish. SO… the souffles. Turned out beautifully!
